Green Chile Casserole



  • 12 corn tortillas
  • 2 (4 oz.) cans chopped green chiles
  • 1 can (16 oz.) hominy, drained
  • 1 lb. ground beef, browned
  • 2 cups grated cheddar cheese
  • 1 can (16 oz.) green chile salsa or • 1 onion, chopped enchilada sauce
  • 1 additional cup grated cheese (cheddar and/or Monterey Jack, for topping)


Preheat oven to 350 degrees.

Quickly fry tortillas in hot oil. Line a 9 x 13 casserole with half the tortillas. Layer all the hominy on top of them. Then place 1 cup of cheese, half of the onion, and one can of the green chiles over the tortillas.

Cover with remaining tortillas, all of the ground beef, and the remaining cheese, onion, and green chiles. Pour green chile salsa over the top and add additional cup of grated cheese, as desired.

Bake 30 minutes. This freezes well. Serves 8-10.
