Grilled Brisket

INGREDIENTS

Marinade:

1 (32 oz.) bottle ketchup

Juice of ½ lemon

5 tablespoons Worcestershire sauce

½ cup butter

1 tablespoon Tabasco sauce

1 small onion, finely chopped

Salt and lemon pepper to taste


Sauce:

1 cup vinegar

2 tablespoons Worcestershire sauce

½ cup butter

Juice of 1 lemon

Salt and lemon pepper to taste

1 ½ teaspoons Tabasco sauce

1 clove garlic, minced



INSTRUCTIONS

Prepare grill. Mix all ingredients for marinade. Baste brisket with marinade, grilling over low flames. Use marinade to keep meat moist throughout grilling process, approximately 30-45 minutes, until brisket is browned. Wrap brisket in foil and continue basting and cooking slowly over low heat (1 hour per pound).

When brisket is done, slice meat and pour sauce mixture over meat. Place in pan; cover well. Heat in low temperature oven (275 to 300 degrees) for one hour.
