Gumdrop Cookies




  • 1 cup unsalted real butter, softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • ¾ teaspoon salt
  • 2 large eggs, room temperature
  • ½ teaspoon baking soda
  • 1 teaspoon real vanilla
  • 2 cups quick-cooking oats (NOT instant oatmeal)
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 ½ cups chopped gumdrops


Preheat oven to 350 degrees F. Cream the butter, sugars, eggs, and vanilla with an electric mixer on medium speed. Add the dry ingredients and mix. Stir in the oats and the gumdrops. Drop by tablespoons full, about 2” apart, onto a parchment-covered cookie sheet. Bake for about 11 minutes, watching to see that they don’t brown too much. Cool (on the pan) for 2 minutes; then remove to a wire rack to finish cooling.

Store in an airtight container.
