Spray aluminum foil with Pam
Spread potatoes
Add cooked chorizo
Sprinkle with cheese (I go heavy)
Salt & pepper
Drizzle with chipotle peppers (note they have a lot of heat, so use at your own discretion)
Cut butter into chunks and place on top
Cover with foil and seal into a pouch. Put on barbecue pit (or in oven) at about 350 degrees for about an hour. Pour mixture into a bowl, mix in cilantro and add more cheese/butter if necessary.
