Kristi’s famous ‘Smashed Potatoes’



These are so good and can be as easy as you want them to be.

Extra heavy duty aluminum foil
1 package chorizo (prefer Chorizo de San Manuel) – cook and drain
Potatoes, scalloped or for super easy – frozen hash brown potatoes
Salted butter (Falfurrias butter is the brand I use)
Chopped chipotle peppers in adobo sauce
Fresh cilantro, chopped
Monterrey Jack cheese, grated
Salt & pepper to taste


Spray aluminum foil with Pam
Spread potatoes
Add cooked chorizo
Sprinkle with cheese (I go heavy)
Salt & pepper
Drizzle with chipotle peppers (note they have a lot of heat, so use at your own discretion)
Cut butter into chunks and place on top

Cover with foil and seal into a pouch. Put on barbecue pit (or in oven) at about 350 degrees for about an hour. Pour mixture into a bowl, mix in cilantro and add more cheese/butter if necessary.
