Lemon Cake



Serves 12

  • 1 3-oz. package lemon gelatin
  • 4 eggs
  • ¾ cup boiling water
  • ¾ cup oil
  • 1 box lemon supreme cake mix
  • 1 tablespoon lemon extract


  • ¼ cup fresh lemon juice • 1 ½ cups powdered sugar

Mix ingredients together and spoon over top of warm cake.


Preheat oven to 350 degrees.

Grease pan. Dissolve gelatin in boiling water. Cool. Combine the cake mix, eggs (beating well after each egg), oil, and lemon extract. Add the lemon gelatin and beat well with mixer. Pour batter into pan and bake for 40-50 minutes. Remove cake from oven and take out of pan. Prick top with toothpick and spoon glaze over top of cake.
