Mom’s Chicken in Tomato Sauce



4 pieces of chicken, skinless
2 sm. cans of tomato sauce (I recommend HEB’s brand, not as sweet)
Chopped onion
Stuffed green olives, sliced
2 bacon slices, chopped
Garlic powder, to taste (optional)
Salt & pepper, to taste


Preheat oven to 325 degrees. Place chicken pieces in a baking dish. Spread the onion, green olives and bacon over chicken. Pour tomato sauce over all and add spices. Cover with aluminum foil; cook in oven for approx. 1½ hours or until done.

Note: I serve this with white rice and a vegetable. It is a quick and easy recipe to make. My mother always made this and we loved it. A friend of mine does not like green olives and substitutes with a vegetable.
