Oatmeal Cake

INGREDIENTS

  • 1 cup oatmeal
  • 1 stick margarine, room temperature
  • 1 ½ cups hot water

Place the above ingredients into a bowl and let sit for 20 minutes.

Add the following and mix well together:

  • 1 1/3 cups flour • 1 teaspoon baking soda
  • 1 cup sugar • 1 teaspoon cinnamon
  • 1 cup brown sugar • 2 eggs
  • 1 teaspoon vanilla • ½ teaspoon nutmeg

Pour into a sprayed 9 x 13” pan and bake in a 350-degree oven until done, about 30 minutes. Meanwhile, mix together the topping:

  • 6 tablespoons margarine • ½ cup brown sugar
  • ½ cup chopped nuts • ¼ cup evaporated milk
  • ½ cup coconut • ½ teaspoon vanilla


INSTRUCTIONS

As soon as the cake comes out of the oven, carefully spread the topping over the cake. Set the oven to “broil” and place the cake under the broiler until bubbly. Watch carefully!

This is delicious served with ice cream or whipped cream.
