Texas Grapefruit Pie



1 9” baked pie shell or graham cracker crust

32 Marshmallows – regular size cut into quarters (or 8-10 oz. Mini marshmallows)

1/4 cup Grapefruit juice

1 cup Heavy cream – whipped (or 9 oz Cool Whip)

1 ½ cup Fresh grapefruit sections (drain very well)

1/4 cup Shredded coconut – optional

1/2 cup Chopped pecans


Melt 1/4 cup grapefruit juice & marshmallows, cool to room temperature.

Fold cooled marshmallows, grapefruit and cream together until very well mixed. Pour into cooled shell. Allow to set 3 hours or overnight. Sprinkle with coconut & nuts before serving.

This recipe has been a family favorite for years. I got it from a lady from Missouri who tried a recipe on a Texas picture post card. I revised a little.
