Wayne Newton’s Breakfast Burritos



• 8 ounces turkey sausage
• 8 ounces shredded potatoes
• 1½ cups egg substitute
• ¼ cup picante sauce
• 6 corn tortillas
• 6 ounces Mexican cheese


Remove sausage from the package and break it up with a fork. Spray a 9 inch skillet with olive oil. Over medium heat, cook sausage until it begins to turn gray. Dry shredded potatoes to remove some moisture and add to skillet. Toss well. Toss frequently till potatoes turn translucent. Add egg substitute and stir into mixture.

Using a flat wooden spatula, turn the mixture until eggs are cooked. Add the picante source and mix well. Remove from heat. Cut 6 pieces of foil large enough to hold a tortilla. Divide sausage/egg mixture into 6 portions. Spread in each tortilla and roll it, ending with fold underneath. To eat, remove foil, place burritos on plate. Add picante sauce and 1 ounce of cheese for each. Microwave till cheese melts.
